Acrylamide in Food Book Give Away
Posted on March 11th, 2019
We have a copy of Acrylamide in Food by Tanya Y Curtis and Nigel G Halford to give away.
Dr Curtis will be speaking at Anatune’s Lifecycle of Food Analysis Workshop on 2nd and 3rd of April. Click here to find out what she and our other guests will be speaking about.
Since its discovery in food in 2002, acrylamide has been one of the major issues facing the food industry and Anatune has long taken a keen interest in the development of detection methodologies.
Unsurprisingly, we were excited to learn about this book and in the spirit of sharing picked up a spare copy to give away to one lucky winner.
Acrylamide in Food comprehensively describes what is known about the toxicology of acrylamide, how it forms in food, the positions taken by food safety authorities and concurrent regulatory issues. It also covers the food industry’s response, the mitigation measures adopted and how successful these have been in reducing our exposure to acrylamide. It then describes the genetic and agronomic approaches that have been taken to reduce the acrylamide-forming potential of major crops.
